Have you tried fennel before? Have you ever eaten raw? It is traditionally used for bloating and breastfeeding and has a black licorice type flavour when eaten raw. Roasting fennel with peppers can be a delicious side dish, but slicing it raw, especially when combined with apples and walnuts is equally flavourful!
1 bulb of fennel, sliced thinly (I use a mandoline), after the stalks and root has been trimmed off
2 apples, cored and sliced (I love Honeycrisp or Gala apples in salads)
1/2 cup of walnuts
1/2 cup of pomegranate seeds (optional but I love the colour and the sweet crunch!)
1 Tbsp of extra-virgin olive oil
1 Tbsp of freshly squeezed lemon juice
1/4 tsp dijon mustard
pinch of sea salt and pepper
1. Combine first four ingredients in a bowl.
2. Combine the last four ingredients in a bowl and whisk the dressing.
3. Add the dressing to the fennel bowl and enjoy! You can add some baked or grilled chicken and you have a wonderful meal.
