Salad Ingredients
3 cups cooked quinoa (3/4 cups uncooked)
4 scallions thinly sliced
1 cucumber, halved seeded & thinly sliced
1/4 cup chopped cilantro
12 to 16 medium shrimp peeled
Dressing Ingredients
2 tbsp lime juice
1 tbsp seasoned rice wine vinegar
1 tsp fresh ginger minced
1 garlic clove minced
Pinch of cayenne
2 tsp asian sesame oil or walnut oil
1/4 cup sunflower oil
2 tbsp soy milk with 1tsp lemon juice
(let sit for 5 minutes)
Directions
1. In a small bowl mix lime juice, rice wine, ginger, garlic, cayenne, sesame oil, sunflower oil and soy milk
2. In a salad bowl combine quinoa, scallions, cucumber and cilantro
3. Toss in salad dressing season with salt to taste and divide among salad plates
4. Top each portion with 3 - 4 shrimp and serve.
