This recipe is a weekly favourite in our house. It is an easy way of getting in some anti-inflammatory turmeric into our meals AND some cruciferous vegetables that are high in I3C (indole-3-carbinol) to help with estrogen metabolism! Did you know that black pepper helps increase turmeric activity and absorption?
1 head of cauliflower
1 tsp turmeric
1/2 tsp sea salt or Herbamare to taste
1/4 tsp black pepper
3 Tbsp extra virgin olive oil (or more if really big head of cauliflower!)
1. Preheat oven to 400 degrees.
2. Chop cauliflower into roughly 1-inch pieces, don't forget to include the hard stem parts or save these parts for a pureed cauliflower soup.
3. Place on baking sheet and add the rest of the ingredients to thoroughly coat.
4. Bake for 30-40 minutes and then enjoy!
I mentioned this recipe on an instagram story recently and someone messaged me about their favourite cauliflower combination using za'atar (Middle Eastern combo of herbs and spices) and lemon juice! I will definitely try this next and see if my crew will like the flavour.
