½, 14 oz can of white cannelini beans
2 cups of arugula or spinach or a blend of both
jar of artichokes, reserve 2 tbsp of oil for the dressing
1 small carrot, peeled and shredded
2 tbsp pumpkin seeds, slightly toasted if you want
Dressing:
Juice of half a lemon
1 tsp apple cider vinegar
½ tsp dijon mustard
1. Whisk dressing ingredients and pour over remainder of ingredients.
2. Enjoy!
