2 cups diced watermelon (1-inch dice)
½ cup crumbled feta cheese
¼ cup chopped green onions
¼ cup mint leaves, finely minced
1 Tbsp. lime juice
1 Tbsp. olive oil
1. Gently toss together all ingredients in large bowl, using hands to keep from crushing watermelon and cheese.
2. Season with salt and pepper if desired.
