Ingredients:
2 medium beets, peeled + chopped
1 cup cooked wild rice
2 cups arugula
¼ cup goat cheese
2 tbsp walnuts
1 tbsp balsamic glaze (or just a drizzle of balsamic vinegar and olive oil)
Salt + pepper
Instructions:
Roast beets at 400°F (200°C) for 25–30 min until tender.
Assemble bowl: wild rice, arugula, roasted beets, goat cheese, walnuts.
Drizzle with balsamic glaze.
