Ingredients:
2 large red peppers, halved and seeded
1 cup cooked brown rice
½ cup cooked lean turkey
2 tbsp diced tomato
1 tsp parsley
1 garlic clove, minced
Salt + pepper
Instructions:
Preheat oven to 375°F (190°C).
Mix turkey, rice, tomato, garlic, parsley, salt, and pepper.
Stuff mixture into red pepper halves.
Bake 25–30 min until peppers are tender. Serve warm.
