Ingredients:
2 chicken breasts
1 cup spinach, chopped
½ cup mushrooms, chopped
1 garlic clove, minced
1 tbsp olive oil
½ tsp thyme
Salt + pepper
Instructions:
Preheat oven to 375°F (190°C).
Sauté spinach + mushrooms + garlic in olive oil until softened.
Cut a pocket in each chicken breast and stuff with spinach mixture.
Season chicken with salt, pepper, thyme. Bake 25–30 min until cooked through.
Tip: Lightly sauté greens to preserve iron and folate.
