Ingredients:
2 medium sweet potatoes
1 cup cooked black beans
1 cup fresh spinach
½ avocado, sliced
1 tsp cumin
½ tsp paprika
Juice of ½ lime
Salt + pepper
Instructions:
Preheat oven to 400°F (200°C). Bake sweet potatoes 45–50 min until tender.
Sauté spinach lightly in a pan.
Mix black beans with cumin, paprika, salt, and pepper.
Split sweet potatoes, stuff with spinach + beans, and top with avocado + lime juice.
Red peppers are a vitamin C powerhouse for winter immunity, with more vitamin C than oranges!
Zucchini is light, hydrating, and easy on digestion. It has B-vitamins, a high water content, and is gentle on the gut.
