Ingredients
Crust
1 cup almond flour
6 tbsp. unsweetened coconut
6 Medjool dates
2 tbsp. coconut oil
1 tsp. cinnamon
Salt to taste
Filling
2 large avocados
½ cup lime juice
½ cup of maple syrup
½ tsp. vanilla
2 tbsp. coconut oil
Zest of 1 lime
Directions
1. In a food processor toss in all of your crust ingredients and then pulse until everything gets broken down and it starts to form into a ball.
2. Next, lightly grease a pie plate with just a little bit of coconut oil then press your crust into the shape you want and then into the freezer it goes to set.
3. Now toss all of your filling ingredients into the food processor and blend until completely smooth. Once your filling is velvety smooth pour into your crust and back into the freezer it goes for about 2-3 hours. Pull it out 20 minutes before you plan on serving just to let it thaw slightly.
