Protein Peanut Butter Balls

Protein Peanut Butter Balls

1.5 cups of rolled oats
2 Tbsp ground flaxseed
2 Tbsp chia seeds
pinch of sea salt
1/4 cup vanilla protein powder (I use PurePaleo but any vanilla protein powder will do!)
3/4 cup natural smooth peanut butter (any nut butter will do!)
1/4 cup unpasteurized honey
1/2 cup mini chocolate chips (I use Enjoy Life as this brand is dairy-free but any will do!)
  1. Add the oats, ground flaxseed, chia seeds, and salt to the food processor and  pulse until some of the oats are broken into very small pieces or are crumbly. 
  2. Stir in the protein powder. 
  3. Transfer to a mixing bowl and add in the nut butter, and honey. Stir with a wooden spoon. If the dough does not stick together, add ½ tablespoon of water at a time and mix in until the dough sticks together easily when formed into a ball.
  4. Stir in the chocolate chips. 
  5. Roll the dough into 20 balls using about 2 tablespoons of dough. Dampen your hands slightly with water to prevent sticking. 
  6. ENJOY right away or you can freeze and eat as an snack before or after a workout!
