Ingredients
1 cup cashews
8 Medjool dates, pitted
1 tsp. pure vanilla
½ tsp. pink salt
1/3 cup shredded unsweetened coconut
Directions
1. Place cashews and dates in food processor bowl. Keep pulsing to get the mixture coarse.
2. Add vanilla and salt.
3. Process until mixture comes into a ball.
4. Roll mixture into one inch balls and roll into coconut to make the snowballs.
5. Refrigerate.
These pecan pie tarts are uncooked and look lovely with a dollop of coconut whipped cream or a scoop of ice cream! Dairy-free of course ;)
