Ingredients
1 cup tapioca starch
1 cup brown rice flour
3/4 cups potato starch
3 tbsp ground flax meal
1/2 tsp salt
1 tsp baking soda
2 tbsp lemon juice
1 1/3 cups almond milk, warmed
2 eggs
1 tbsp honey
1 tsp apple cider vinegar
¾ cups raisins
1 tbsp cinnamon
Directions
1. In a large bowl, whisk together all of your dry ingredients
2. In another bowl with a hand mixer beat your milk, eggs, honey and vinegar for about one minute.
3. Combine the two; stir until well until combined. Fold in raisins and cinnamon. Pour into a greased nonstick 8- x 4-inch loaf pan.
4. Bake at 350 F until golden brown about 1 hour.
