'I have raised kitchen monsters' is a frequent thought that runs through my head, but with some reflection I have realized we are raising independent kids that have picked up some kitchen skills in the process. Some days I groan at the mess they are making, but then some days I am so happy to see them drag out the blender and just create their own smoothie or popsicle concoctions all by themselves. The nice thing is that you can't really screw up a fruity popsicle.
We have tried different variations with coconut water, with honey or maple syrup and without, but it always comes down to this simple little blend that the boys like to make on their own. It is very forgiving so just use the amounts you have.
4-6 cups watermelon
16 fresh mint leaves
juice of 1 lime
Blend and pour in popsicle molds. We love the Zoku brand of molds, but you can find molds online or even your local dollar store. We also always have leftover to make 'cocktails' afterwards! You can watch the video of me making the popsicles with my boys here.
